PAARDEBOSCH WINERY – SWARTLAND

Marius Malan grew up on their family farm, Staart van Paardeberg, on the foothills of the Paardeberg Mountains. Grape growing and producing wine run in the family and it was always Marius’s dream to become a winemaker. After graduation at Elsenburg in 2005, Marius worked as assistant winemaker and viticulturist at Uva Mira, thereafter joined Slaley as chief winemaker and viticulturist. A diploma at Cape Wine Academy, Wine Evaluation Course at Stellenbosch and next… Cape Wine Master.

Marius has a very unique winemaking philosophy: A minimalistic approach not interfering or manipulating the fruit at all. Select the perfect soil and use healthy fruit. Don’t overpower the characteristic given to you by the vine with artificial techniques or too much new wood. When it comes to fermentation, no yeast or nutrients are added and Marius relies on the wild yeast in the vineyards / grapes to kick in naturally. (Wild yeast naturally exists in the air and on vegetation and clings to surfaces in the vineyard, winery and on equipment.)

All in all a very natural wine with no added acid, yeast or nutrients. The wine is aged on the raw lees for 9 months, not filtered or stabilized. It is made in an oxidative style and true to the so called “Swartland Independence”
