Hillcrest Estate is a boutique winery nestled in the Tygerberg Hills in the ward of Durbanville. Close proximity to the Atlantic Ocean makes it one of the prime cool growing grape regions in the Western Cape. Geologically Hillcrest is quite unique as the vineyards are strewen with Malmesbury shale, a sedimentary rock baked by molten magna millions of years ago. Well drained soils with a good water retention capacity are differentiated into Oakleaf, Hutton and Clovelly types. The vineyards are planted on North West facing slopes between 200 & 380 metres above sea level. These factors combined with a modicum of rain at the start of berry ripening augur well for the production of top quality white and red wines. Sauvignon Blanc is planted on the higher slopes to take advantage of cooler and longer ripening conditions. The red varieties favour slightly warmer conditions and are planted lower down to attain full flavour ripeness. Various vineyards management practises are initiated to ensure that the grapes receive sufficient sunshine and are uniformly ripe at harvest.
