BOTTLE PLATE PILLOW – BAFANA – MACAROONS

Yes, yes yes… The macaroons are ready. And they are simply Dee-Lee-She-yhes! … Delicious, di-vine, delicate, daring, daunting and as we would say in Afrikaans… Donners lekker!

To better understand the complexity of this “super-cookie”, BottlePlatePillow and Master Chef, Frank Meijer joined forces and produced a  humoristic video clip. We will also introduce a range of wine pairing macaroons which will be available soon. Pair them, eat them, share them but most important… have fun!

This is not your average cookie and some people will grab you by the throat if you call it a cookie. One can compare it to calling a “Petrus” just another bottle of wine…

Frank perfected the art of making the macaroon and it is his vision to educate the public not only on the different styles and tastes available, but also to enable you to identify and appreciate the perfect macaroon.

Well, I like to simplify things in live, or should I rather say, not over-complicate things… Let me explain by using wine as an example. Wine is the result of three variables: the grape, the wine making process and the ingredients (yeast). A Macaroon needs almonds, a very precise procedure and only the best ingredients like Belgium chocolate. Can anyone make a bottle of wine? I suppose so… but can you make a good bottle of wine is the question and the same applies for the macaroon.

Frank says:  “It is very important to understand that the macaroon is a hand-made cookie, you cannot guarantee that they will all be the same weight and size. This is the main reason why most shops in France, sell them by weight.”  In South Africa, we sell meat per KG and that is about it: “Excuse me… How much for one? Thank you, I’ll be back…”

When you decide where to buy you cannot compare apples and pears; there are two ways of making them:-

  • The Italian Meringue (Pierre Herme style) – which Frank follows. (Cook sugar water and then mix it with the meringue.) Slightly sweeter then the French Meringue style.
  • The French Meringue (Lenotre style, Stephan Glacier style) (Raw egg white mixed with sugar)

Frank uses pure Belgian imported chocolate as the basic for his fillings; others use marmalade or cheaper alternatives. His macaroons on average weigh about 5 grams more than the colleagues. I personally believe it gives his macaroons the edge and this is the way I prefer them … Fat little buggers. One must remember, taste differs, go out and experience – that’s what it is all about!

  • Cut open the macaroon… (If you really have to)… if it is hollow… not good
  • Dry on the inside… not good
  • Egg shell- like crust… Good
  • Soft and moist on the inside that holds the macaroon together… good
  • If it is like a typical meringue (Skuimpie)… not good
  • If you want more….good
  • Melts in your mouth… good
  • If you haven’t touched your glass of wine before finishing the macaroon… very good
